Chix Sauce

(from Aaron Franklin’s PBS show BBQ with Franklin)

1 cup ketchup
1/2 cup brown sugar
1/4 cup white vinegar
1/2 cup apple cider vinegar
2-1/2 tablespoons tamarind concentrate*
1/4 teaspoon smoked salt
splash of Worcestershire
1/2 teaspoon Ancho chile powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon coarse black pepper
squirt of honey

Warm over medium heat until sugar is dissolved and everything is combined. Let cool.
*from Asian, Indian, or Latin markets
