Crockpot Pot Roast

Layered in the bottom of the crockpot:

  • 1/2 lb. red potatoes, quartered
  • 7 oz carrots (about 2 large) in bite size chunks
  • 2 large stalks celery (4 oz)
  • 2 cloves garlic, minced
  • 8 oz crimini (or white) mushrooms, quartered or sliced
  • 1 large onions (about 1-1/2 to 2 cups), thinly sliced

Mix together and pour in:

  • 2 (10.75 oz) cans condensed cream of mushroom soup
  • 1 (1 oz) package dry onion soup mix
  • 1-1/4 cups water (you can substitute red wine for all or part)

Place on top of veggies:

  • 5-1/2 lb 7-bone or chuck roast

Cook on High for 3-4 hours or on Low for 8-9 hours.
(I prefer Low-cooked, but sometimes you don’t have enough time.)
